Delicious on meat dishes & sandwiches. Lightly sweet and savory.

1 lb ripe brown figs

1 tsp toasted fennel seeds

½ cup sugar

2 tbsp lemon juice

2 tsp balsamic vinegar

Macerate figs in sugar for at least 4 hours. Add fennel and lemon. Cook in pan 12-15 minutes at boil that can’t be stirred down. Add vinegar. Pour hot mixture into sterilized jar. Water bath process for self-stable cans. Makes 12 oz
